Muku
New York CityIt's chef Manabu Asanuma's vision at MICHELIN-Starred Muku, and the Tokyo- and Taiwan-trained award-winner is spotlighting goho cuisine here. The lesser-seen style of serving a meal with all five classical techniques of Japanese cooking—raw, grilled, simmered, steamed, and fried—means this will be a unique experience. "Seasonality, simplicity, and intention" are Asanuma's goals here, something he also picked up in the acclaimed kitchens of odo and Uchu.
