This spring, we’ll spend sixteen weeks in LA, from March 11 to June 26, cooking, listening, learning, and building a body of work rooted in this place. Alongside the residency, which will be documented as part of a special film project, we’ll open a Noma Projects shop in Silver Lake, host a number of events with friends at MAD, and collaborate with cooks, artists, and communities we admire across the city. For this season, our cooking will be shaped by what exists here — the Pacific, the mountains, the desert, and the long distances between them. We’ll spend time getting to know ingredients, producers, and traditions, and let that guide what ends up on the plate, filtered through our imagination and the know - how we bring with us from Denmark. We’re grateful for the opportunity to be in Los Angeles, and thankful to everyone welcoming us to the city!
