New YorkAs the name suggests, this spot is a mix of French and Basque cuisines, and it also just so happens to be entirely vegan and kosher. Housed right in the heart of Union Square, they’re serving up dishes like faux gras made with smoked lentils and white wine-poached apples; escargot with wood ear mushrooms; and a lovely tarte au citron with a vanilla and elderflower meringue.
